These pickled onions are a sweet and bright topping to any sandwich, salad, or darn near anything. These onions are super easy to make and absolutely delicious. As a bonus, you can use the vinegar to make your own vinaigrette dressing.

Ingredients

  • 3 red onions
  • 2 tbs white wine vinegar per onion (6 tbs total)
  • 2 tbs rice vinegar per onion (6 tbs total)

Instructions

  1. Thinly slice the onions
  2. Combine the onions and vinegars in a sealable container and let sit
  3. Check on the onions after 24 hours. They should be noticeably pink

Notes

The pickled onions will last a long time. I keep mine for several weeks and use as needed.
